I heard pterodactyl is the most widely used, if its not basically is any service set up for k3/k8s or just one container at a time?

Pterodactyl is widely used. Wings use docker containers

Ptero can also run inside a docker container, though not officially.
the docker compose image is officially supported
and has a support channel in the official discord
seperated for wings and panel
