Ok so I've vaguely heard of sponge for years but I'm just now looking into it. It's a plugin API which is implemented onto forge, fabric, and vanilla?

Is there a disadvantage to making a sponge plugin over a serverside mod? If so, what is it? If not, why isn't sponge more popular?

sponge is its own standalone api
supported implementations are spongeforge and spongevanilla
although nothing is stopping you from implementing it on any server software or modloader
as for "why isn't sponge more popular" - I wish it was, but sadly it coldn't beat a headstart bukkit had
huge bukkit based ecosystem drowned it out before it had a chance of wider adoption
which is a shame, because it's way better api than bukkit, and designed to accomodate for custom content, unlike bukkit

This is probably the best point here tbh.
Minecraft flies really atpical as far as mods go. In Stellaris nobody is supporting 1.4 anymore, but MC still has demand for 1.7.2 and earlier.

If the community was more 'latest or die' then a lot of the problems vanish overnight.
