When using itzg,
   volumes:
      - mc-data:/data

volumes:
  mc-data: {}

If I have multiple servers, what should I change? If i keep this the same will any of the data overwrite one another?

It's one volume, if you want multiple server processes to share one volume then do this, if not then do multiple volumes or mounts.
