idk where to exactly look as I was not able to find any resources on my question but I was looking for hardware recommendations for a Minecraft server(locally) that is able to run 2 or 3 server at once while 1 or 2 being a moded server, I have a budget of around 600 Euro so if any one has some good recommendations i am gladly listening.

Minecraft cares exclusively for CPU speed. More IPC is more good, generally higher single thread score the better.
To run more concurrent servers you need to scale resources, 8 gigs of RAM per server, additional NVMe as require.

Go buy yourself something used to save cash and get bonus power, modern Ryzen CPUs tend to be the best of the crop for Minecraft hosting.

are there some resources that i can look u , i am fairly up to date with cpus and it stuff in general but all i can find for server hosting is the same statment u just said, i am thinkin rn of starting with a r5 2600 (yes its old but it is what i have rn) add 23 gb od ram, and then later upgrade to a r7 or even r9 of a newer gen, is that generaly a good idea, rn i am running 2 x Xeon E5 2660 cpu's adn around 48 gb ram in total, my crafty vm is running 6 cores of that with 16 gig ram rn, and i have huge performance issues with this modpack https://www.curseforge.com/minecraft/modpacks/dawn-craft

2600 will work, yeah.
Generally newer is better but single core speed is king, find whatever works out to be the fastest for a budget and build around that CPU.
