Server Falls behind suddenly, even though normal performance is good

Hello! I am running a frabric server 1.21.5 in a docker container using itzg/docker-minecraft-server
Installed mods: Chunky, Fabric api, Carpet, Ferritecore, lithium, spark.
I have yet to catch a crash while I am online, and the only "player" online was a carpet bot loading an iron farm.
The mspt is normally at around 20-25 when we are around 5 players logged in, including the carpet bot loading the iron farm. I have no clue how to troubleshoot the issue as I haven't been able to catch it as it is happening,

Any advice on how I can troubleshoot it would be much appreciated, thank you!
