Got a modded minecraft server with a bunch of friends, and as I understand the entire server is crashing as soon as these two people in the end login, but I'm not good at deciphering crash reports from the server.

If there’s some multi threading config in the mod, disable it

disabling the multithreading seems to have resolved the issue! One of the players was running a bone meal farm, but I don't know how that caused the issue.

Multi threading is always not very easy to do in mods
