Advice to someone doing a public MC Server?

I fear I am missing knowledge so I am making this post incase I miss something from my digging online.
I am no expert and genuinely seek guidance to ensure I don't make major mistakes in the future.
- CONTEXT
I am in uncharted territory, I can't find anyone doing what im doing, since usually this is done on Java. I got bored one day and now I have a Bedrock server with 21 addons and more planned if I don't hit consoles join limit.
Why bedrock? I got burnt out on making and playing with Java mods, so I decided now that addons exist on bedrock is it possible to do a Bedrock Modpack?
After 2 months of trial and error, I now have a full modded experience with little lag that works for console and PC WHICH IS INSANE. Originally was on a realm, moved it to a server 3 days ago due to horrible lag since the realm couldn't keep up.
Before I get to questions here are server details, if you have questions how the hell I actually am manging a working heavily modded (addon) bedrock server ask!
- MY SERVER SPECS
I am using Pebblehost premium package
Ryzen 7900 @ 3.7 / 5.4Ghz CPU
8GB
DDR5 4800MHz
400% CPU space on the panel
Unmetered NVMe SSD Storage
4 threads
Tick chunk distance at 2
View distance at 8
Backup itself daily, I also do manual backups.
HOW ITS RUNNING? (PANEL)
My CPU % seems to stay around 50%-100% but randomly jumps to nearly 300% at random. (With nobody on, it's at a low 30%)
The GB don't seem to ever reach 3, even after being on for hours.
Only 1 thread is being used.
I at most have had only 7 players on the server and the lag is only very minor.
---Questions---
Should I be using more then 1 thread? Why or why not?
How should I be upgrading the server if I go for more players?
I see dedicated servers are a thing, which people use if they have 200+ players. How big does a server get before you use dedicated?
Anyone know anyone else doing similar? IAm I the only one insane enough to attempt heavily addon due to the risks?

Being bedrock leaves you always with more questions then answered.
But here are my answers to a few subjects you put up.

Can you explain the threads?
When I asked the help place for Pebblehost about disappearing mob issue and threads they said
"Not by default, there's the simulation distance but it won't make the dissapear per se - and the threads are mainly used for plugins/mods with Async computation, I would not mess with that server property"
But it felt weird they said NOT to use it.

Could be dangerous and leads to issues
but you can always screw their suggestions, by backing up your server and fucking with it either way

i’ve Never in my life ran a bedrock server so my knowledge on this matter is very little

Do you think a rule to limit farm automation is a bad one?
I was thinking allowing only 2 large farms and 1 small farm per team (automated, I'm not restricting normal farms)

I’m going to go by java ideals compared to bedrock since idk them
All farms no matter how far out can impact the server exactly the same.
Making an efficient farm is always healthy for any reason.

I can have a mob farm at 2 mill
and spawn
If i ran either of them in the same conditions it’s exactly the same performance
