Which version of MC do you guys recommend? I've been spinning up servers on 1.21.4. Now that I have infra working, we are playing with plugins and such -- obviously there is not much support for 21.4. We have only used Vanilla and paper --for no particular reason than just to try. I have done some research but I value ya'lls opinions and viewpoints over random reddit results. Thanks for reading!
1.21.4 has great support. Latest is always best, unless you're talking modpacks.

I admit I'm not 100% on the distinguishment BUT I have been looking at plugins specifically. I was gonna load up core protect and thought I read something about not supporting my version but on second look I appear to have misread or som'! xD

In general, major plugins will be one of a few situations:
1. An updated version isn't necessary, as it didn't break
2. An updated version is already released
3. An updated version is available on their Jenkins (or other CI/CD service)
4. An updated version is available on their Patreon
So just check those things first. For CoreProtect, it happened to be #4 at first.

Hell yeah, thank you for spelling it out for me!
Is there any real risk in trying to load a plugin that may not "work" with my version? I.e. will they make changes that an idiot like me would have difficulty undoing?

It's very rare that a plugin will:
1. Make it through the loading process without erroring and then
2. Throw an error afterwards that
3. Doesn't crash the server and
4. Causes irrevocable damage
That's a very specific series of events that is just plain rare. Even so, just make a backup of your world folder before upgrading plugins. You should be making regular backups anyway.

You should run fabric with some optimizations if you feel like playing with fully vanilla mechanics

I appreciate that. Kinda came to the same conclusion. Vanilla was more or less proof that I could get a "normal" server going. Obv ptero makes it dumb easy regardless.. but I started out on MineOS spun in ProxMox

fabric retains all vanilla features and gives you the ability to add optimizations on top
so unless one of your optimization mods tinkers with game mechanics (ie alternative current redstone), its 100% vanilla
