Best OS for dedicated server

I'm building a server in an old mini PC and I'm wondering what Linux distro would be best for the server. I want to be able to remote into it and control the server with a different computer (even if the PC has to reboot) and I wouldn't have a monitor or keyboard for it past when I set it up. right now I'm leaning towards kubuntu amd then using craftycontrol and teamviewer for control. anyone have a better option?
@Ruddy Ground-Dove I have a few questions.
1. How experienced with Linux are you?
2. Are you comfortable with CLI to use Linux?
3. Is this for no effort end use or are you planning to use it as a learning opportunity?
4. Do you want to go into IT?

3: I can put in a good amount of effort, but I want to have it be pretty simple cus I'm moving from an old laptop, and I want to minimize downtime

In that case don't bother with Teamviewer, you won't need it, simply SSH in with a terminal and call it a day, remember your SSH keys.
As for the OS? In my opinion you've really got 2 basic options depending on what you like, there's the simple and will work one, and the less simple but highly rewarding one.

1. Ubuntu is pretty good for basic deployments and simple container usage as it's a traditional OS, it'll serve you well as far as that goes. Right now the standard OS used in this space is Ubuntu Server 24.04.
2. NixOS is really good for having a hyper stable deployment that doesn't suffer from the Debianism that is delayed package releases, though it has a very different method of managing packages in a declarative way.

If you're just starting with doing this properly pick Ubuntu, if you're wanting to go next level on OS management and don't mind getting into the weeds a bit then NixOS is awesome.
You also mentioned Craftycontrol, there are other panels.
You have Moonlight, Pterodactyl, Pelican, AMP, Pufferpanel, and a couple of others.

The standard here is Ptero, but Moonlight looks VERY promising.
Moonlight is very much the new kid on the block, less mature than Ptero, but it absolutely has a great future.

It looks pretty nice, my only concern is that I'm currently using fork and as a new software it is kind of unstable, but it does look easier than ptero
