what hardware should i get to run minecraft servers?

i run servers here and there for my friends and i and i usually use my laptop to do so but i would prefer to run one headless + ssh. bunch of sources on mini pcs or hardware found on reddit but they are all very out of date (5 years ago).

i run some larger modded packs sometimes (200+ and/or need to handle forge sometimes) so i'd like the server to be able to handle more than just traditional vanilla experience (which is why i'm slightly skeptical an rpi will suffice, but do correct if i am wrong) [i also sometimes run two servers in parallel, one modded one unmodded]

also, i've never used linux for server hosting before, are there any inherent disadvantages or things i will need to look out for when doing so?

my laptop has a i7 8750H - enough to run servers (albeit limited to about one at a time, as for some reason the computer likes to forget about one of the servers for some reason and then watchdog kills it), although i want independent server hardware as i use this one for work stuff occasionally and want something specifically for just hosting stuff on it (full uptime, ect.)
@Tamz using linux is better in the sense its not bloated like windows, and there is more software out there for you to use like AMP panel, Pterodactyl Panel, Craftcontroller Panel etc etc

i understand linux's advantages, of which there are many - but i just want to know if there are any disadvantages to using it, such as incompatibility with mods? ect.
@Tamz no, mods dont care what OS you are on
the only disadvantage is learning how to use it but its quick tbf
